Brazil Natural

The world renowned coffee producer, Brazil, is also the world largest export of coffee, catering one-third of the world’s coffee demand. Apart from the well known Arabica coffee, Brazil also produces specialty coffee.
They are either natural (unwashed) or pulped natural (semi-washed) coffee cherries dried under shed with skin intact preventing the lost of their sweet mucilage whilst drying. This method results in a bodily sweeter, smoother and complex coffee profile.
Brazil’s specialty coffee is also uniqued because of its grading or quality classification system. They are ranked on the basis of their bean sizes through screen sorting, colour and cupping. Their standards are determined as follow:
- The 17/18 screen size which classifies the beans to be one screen size larger than that of 14/16 screen size. The 17/18 screen size beans is the larger beans and
classified as a higher quality coffee. - The NY 2/3 is the standard specified by the Green Coffee Association of New York. The fraction 2/3 refers to the amount of defects permitted in the lot which allows for a maximum of nine secondary defects and no primary defects at all.
- Strictly Soft Fine Cup (SSFC) signifies excellent grade coffee resulting from the coffee cupping or tasting. Strictly soft beans grown at relatively low altitudes
(under 1200 meters) are lighter, less dense and the coffee are free from phenolic (acidic) taste.
